“藻塩”とは古墳時代から、日本の塩づくりの原点とも呼ばれる製塩法「藻塩焼き」製法で作られた日本古来の塩。アマビトやアマと発音される「海人」は、古代、海で魚や貝を取り、「藻を焼いて製塩すること」を生業とした者の呼び名で古く万葉集などの文献に多く見受けられます。この藻塩の製塩に使われた製塩土器が1984年に上蒲刈島の海岸で発見され、その製法が紐解かれてたことがきっかけにこの地で藻塩作りが1000年ぶりに復活しました。
